Allo stesso tempo, il mondo degli affari sta tornando alla normalit\u00e0, con il ritorno al lavoro dopo le meritate vacanze estive. Tuttavia, anche in questo periodo dell'anno, non \u00e8 esattamente la vita di tutti i giorni. Il motto ufficiale di quest'anno \u00e8 \"Plasmare il futuro insieme\". E s\u00ec, anche noi vogliamo plasmare il futuro, lavorando sui nostri prodotti, cercando uno stretto scambio con fornitori e clienti e tenendoci sempre aggiornati. Ecco perch\u00e9 abbiamo sviluppato un nuovo stand fieristico per ANUGA e per tutti i prossimi eventi. Per noi si tratta di un passo verso il futuro, una visione che non abbiamo solo progettato sulla carta, ma anche realizzato direttamente. A causa della mancanza di materia prima, le fabbriche di trasformazione hanno dovuto ridurre il lavoro al 50-60% gi\u00e0 alla fine di agosto e i coltivatori di pomodori hanno aumentato i prezzi fino al 20%. Tuttavia, i prodotti industriali non sono stati (ancora) colpiti dagli aumenti di prezzo, come ci ha detto un insider.   <\/p>\n<p>L'umore \u00e8 un po' migliore nel Nord Italia, almeno tra i produttori convenzionali. Qui la raccolta sta procedendo bene - a parte un'interruzione di tre giorni a causa di forti piogge alla fine di agosto - e gli agricoltori sono soddisfatti del loro raccolto positivo (fino al 95% delle previsioni) con un alto contenuto di Brix. Solo nel ferrarese il raccolto \u00e8 inferiore del 30% rispetto a quello previsto, con ripercussioni soprattutto sui prodotti biologici. Il motivo: la grandine, la tempesta e la pioggia di maggio hanno distrutto grandi quantit\u00e0 di giovani piantine di pomodoro.  <\/p>\n<p>Non pu\u00f2 mancare uno sguardo alla Turchia: La primavera piovosa seguita da caldo estremo e siccit\u00e0 in estate stanno ora mostrando i loro effetti sotto forma di basse rese e prezzi elevati. A met\u00e0 settembre, ad esempio, il prezzo delle materie prime \u00e8 aumentato del 35% in soli due giorni. Un'altra ragione per i rapidi aumenti \u00e8 il continuo aumento del tasso di inflazione. Ad agosto era salito al 58,9%. Il 21 settembre la banca centrale turca ha quindi reagito per la quarta volta consecutiva aumentando di 5,0 punti percentuali il tasso di interesse di riferimento, che ora si attesta al 30%. L'unica domanda \u00e8 quanto saranno alte alla fine della stagione, tra qualche settimana. Poca produzione, stessi prezzi alti? Probabilmente s\u00ec. A prima vista, si potrebbe pensare che la lira turca, che si \u00e8 svalutata da maggio, possa mitigare l'aumento dei prezzi per gli importatori dell'area dell'euro, ma ci\u00f2 \u00e8 ingannevole: Poich\u00e9 i produttori nazionali di conserve acquistano dall'estero materiali e ingredienti, come la banda stagnata e l'aceto, e devono scavare nelle loro tasche a causa degli scarsi tassi di cambio in euro e in dollari, i prezzi aumenteranno comunque. L'alto livello dei tassi di interesse, inoltre, grava ulteriormente sui produttori e sui fabbricanti turchi e rende difficile ottenere i prestiti necessari.<\/p>\n<p>La gi\u00e0 scarsa offerta di materia prima si scontra con l'aumento della domanda da parte di Stati Uniti e Canada, poich\u00e9 quest'anno il Per\u00f9 non \u00e8 in grado di soddisfare la domanda di pepe e di prodotti a base di peperoncino di entrambi i Paesi. Quali sono le reazioni delle aziende associate?<\/strong><\/p>\n<p>L'incertezza e le preoccupazioni sono molto grandi. Si sostiene sempre che l'abbassamento dell'IVA \u00e8 uno strumento introdotto nella crisi di Corona, ma \u00e8 una richiesta che esiste da decenni, una misura strutturale immensamente importante per garantire in modo permanente la diversit\u00e0 delle piccole imprese gastronomiche a conduzione familiare. Forse ci siamo lasciati alle spalle la pandemia, ma ne sentiamo ancora le conseguenze: I prezzi dell'energia stanno esplodendo, il costo del cibo \u00e8 enorme, i costi del personale sono in aumento. Inoltre, gli ospiti sono riluttanti a consumare, saltando gli antipasti e dividendo i dessert. Tutto questo porta a un calo del fatturato. Per fare un esempio: il 40% delle aziende gastronomiche in Baviera ha un fatturato annuo inferiore a 100.000 euro.<\/p>\n<p><strong>PMM: Si profila un'ondata di fallimenti?<\/strong><\/p>\n<p>Sicuramente. L'aumento delle tasse \u00e8 cos\u00ec massiccio da minacciare l'esistenza delle imprese. Abbiamo avviato un sondaggio tra i nostri membri e il 7,2% delle imprese dovrebbe chiudere - si tratta di 2.400 imprese. E quelle che non devono chiudere devono licenziare il personale. Per me \u00e8 un calcolo da lattaia dire: basta con le tasse. In fin dei conti, il costo della merce \u00e8 solo una piccola percentuale del prezzo di vendita. L'energia, il personale, l'affitto, il leasing, gli investimenti per il futuro: tutto questo fa la sua parte. Ma la sensibilit\u00e0 al prezzo degli ospiti c'\u00e8.<\/p>\n<p><strong>PMM: Olaf Scholz aveva prospettato la possibilit\u00e0 di mantenere l'IVA al 7% nel 2021. Una promessa vuota?<\/strong><\/p>\n<p>\u00c8 vero, Olaf Scholz l'ha promesso pi\u00f9 volte - ci sono anche dei video a riguardo. Ora si fa riferimento alle discussioni sul bilancio che inizieranno dopo l'estate.
